The red color on gingerbread

I finished the holiday gingerbread baking, but did not get the chance to write about the red color on gingerbread cookies. With this technique there is no flood icing/base icing before the decoration gets on the gingerbread cookie.
A nice red or other color can be reached with a simple technique used in a couple of different ways.
The color is brushed on the gingerbread cookie itself without royal icing.

Gingerbread recipe

I prepared two different gingerbread recipes for those who use metric/ American measurement. I have started with this gingerbread recipe about 10 years ago, decorating gingerbread cookies with friends.
Over the years I tried several gingerbread recipe variations but this is still the best for me. It is great to work with; it is semi soft after baking, and doesn’t dries out quickly. Try it, and let me know how it turns out!

Royal icing consistency

For a beginner it is always hard to make sure that the icing consistency is right for the design. I had lots of trouble at the beginning. I just wanted to make flooded cookies, but the icing was too thick and it did not run at all, or the opposite happened,  that it was way too fluid to draw lines. Actually, it is not exactly true, I was able to draw the lines, but after a while the lines just run into one big mess, instead of staying in the position I laid them down.

Sooner or later, let’s say later, I learned how to determine the right consistency of the icing.
Mostly I use 3 different consistency.

Let start making decorated cookies!

Are you one of those many people who admire decorated cookies, but afraid to try it yourself?

This is what you need to make decorated cookies!

Don’t be! It is easier than you think! At least the beginning is not so difficult.
Decorated cookies are great gifts for teachers, friends, and everybody with sweet tooth. It is also a great project with your kids on a rainy day, or homemade present for grandma.

First, you need a good recipe for making decorated cookies!

It can be shortbread, sugar cookie or gingerbread. I have tried a lot of different recipes before I settled on my own sugar cookie recipe.

Royal Icing recipe with eggwhite

This is my favorite traditional Royal Icing recipe with eggwhite.

  • 3 ounces of pasteurized egg whites or regular egg whites
  • 1 tbs of Vanilla extract
    ( I use it only if I color the icing later, because even though it has no color, it just turns the icing a little yellow ) You  could add a little bit of lemon juice for flavor or almond extract as well.
  • 4 cups confectioners’ sugar

Sugar Cookie Recipe Ingredients:

  • 1 1/2 cup unsalted softened butter (3 sticks)
  • 2 cups white sugar
  • 4 eggs
  • 1 1/2 teaspoon vanilla extract
  • 5 cups all purpose flour
  • 2 teaspoon baking powder
  • 1 teaspoon salt
  • Optional : 1 1/2 teaspoon cardamon powder
